Double Cheese + Cauliflower Patties
Time: 45 minutes
Makes: 10-12 patties
What you need:
1/2 cauliflower
1 cup grated vintage cheddar
1/2 cup grated parmesan
2 eggs
1 onion, sliced
2 cloves garlic, crushed
1 tablespoon curry power
2 tablespoons coconut flour
olive oil
salt + pepper to taste
What to do:
1 / Preheat oven to 180°C.
2 / Remove the cauliflower stalks + roughly chop the florets. Add to a food processor. Pulse the cauliflower until a rice like consistency is achieved. Transfer to a large mixing bowl.
3 / Heat oil in a large saucepan over a medium heat + cook the onions + garlic for a few minutes. Add curry powder + cook for an additional 30 seconds, until fragrant.
4 / Add the onion + garlic mixture, cheeses, eggs + coconut flour to the riced cauliflower. Add salt + pepper to taste + stir to combine.
5 / Line a large baking tray with parchment paper. Form vegetable mixture into small flat patties (use about 2 tablespoons of mixture per patty). Place evenly on a baking tray + press down lightly with your fingers or the back of a fork.
6 / Cook patties for 20 minutes on one side, then gently flip over + cook for about 5-6 minutes on the other side. They should be firm + lightly golden brown.
7 / Serve fresh from the oven with salad. You can store these in an airtight container in the fridge for up to four days.
